Christmas Is Getting Closer. A Gingerbread Recipe
Marshal Piotr Całbecki shares with us his recipe for Christmas gingerbread cookies: “It’s my mother Sabina Całbecka’s traditional recipe. You can’t go wrong with it – they always turn out great.”
Ingredients:
- 16 cups of wheat flour (type “Wrocławska”)
- ½ kg of honey
- 3.5 cups of sugar (the sugar-to-honey ratio can be adjusted in favor of honey)
- 1 block of Palma margarine
- 4 eggs
- mixed gingerbread spices, to taste
- 30 g of baking soda or baking powder
- for the caramel: 4 tablespoons of sugar + ½ cup of water
Preparation:
- Mix the flour, sugar, eggs, and baking soda well (first combine flour, sugar, and soda, then add the eggs).
- Bring the honey, margarine, and gingerbread spices to a boil.
- Prepare the caramel: simmer the sugar and water over low heat until a thick syrup forms and begins to caramelize.
- Bring the caramel and honey mixture to a boil, then set aside to cool. Add to the flour mixture and knead thoroughly.
- Set the dough aside in a cool place for 2 days.
- Roll out the dough, cut out gingerbread cookies using cutters, and bake in a preheated oven.
- Icing: mix sugar with water over heat until it turns white; add vinegar, and optionally some cocoa.
